2 tablespoons olive oil
1 small chopped onion
1 chopped red pepper
2 cloves minced garlic
½ bag of Boca or
Morningstar veggie crumbles (optional)
Sometimes I like to add
chunks of cooked chicken to make it non-veggie chili
1 large (29 oz) can diced tomatoes (the ones with the mild green chiles are great)
1 large (29 oz) can black
beans
1 large (29 oz) can red
kidney beans
1 (15 oz) can garbanzo
beans
1 bag (16 oz) frozen corn
¼ - ½ cup of your
favorite BBQ sauce
¼ cup of your favorite
salsa
1 tablespoon chili powder
salt, pepper, crushed red pepper, cumin – any
seasoning to taste
In a
large pot sauté the onion, red pepper and garlic in olive oil. If you
want to add veggie crumbles or chicken, add it now. Add the chili powder and any other spices.
Add the salsa and all other ingredients.
Cook and serve when hot, or you can put it all together in the crockpot and let it simmer for as long as you like.
