Pumpkin Bread
INGREDIENTS:
1 ¼ cups white flour
½ cup
wheat flour
1 ½ cups pure maple syrup
1 teaspoon baking soda
¾
teaspoon salt
1 teaspoon cinnamon
½
teaspoon nutmeg
½ cup
coconut oil
1/3 cup water
2 eggs
1 cup pumpkin
½ cup
walnuts, chopped
½ cup
raisins
DIRECTIONS:
1.Preheat oven to 350. Spray bottom only of a loaf pan with cooking spray.
2.In a large mixing bowl blend maple syrup, coconut oil, water, eggs
and pumpkin. In a medium mixing bowl
combine flours, baking soda, salt, cinnamon and nutmeg. Slowly add the dry mixture to the wet,
combining thoroughly. Fold in walnuts
and raisins.
3.Bake for 60 minutes or until a toothpick comes out clean. Cool in the pan for 20 minutes, then transfer
to a cooling rack for another 20. Slice
and eat, warm or cool, with or without cream cheese spread over a slice….
