Pumpkin Pound Cake

 

INGREDIENTS:

2 ¾ cups sugar

1 ½ cups butter

1 teaspoon vanilla

6 eggs

3 cups flour

½ teaspoon baking powder

½ teaspoon salt

¾ teaspoon cinnamon

½ teaspoon ginger

¼ teaspoon cloves

1 cup canned pumpkin

 

DIRECTIONS:

1.Preheat the oven to 350, spray a bundt pan with cooking spray and dust it with flour.

2.In a large bowl, beat the sugar and butter until fluffy.  Add the vanilla and then the eggs, one at a time, beating well after each addition.  In a small bowl, combine flour, baking powder, salt, cinnamon, ginger & cloves and mix well.  Alternately add dry ingredients and pumpkin to the butter mixture, beating well after each addition.  Pout the batter into the pan.

3.Bake for 70 minutes (toothpick test it for doneness).  Cool in the pan for 15 minutes, then completely on a serving plate.
