Busy week

We had our three year wedding anniversay, Mom’s bday celebration at Gram’s, dress shopping for HT’s wedding, dinner at Munich Haus, much cooking and baking (due to CSA shares with large quantities of veggies and cool weather paired with the addition of our oven to the kitchen). Dad came and borrowed the truck today for picking up Becca tonight and moving tomorrow.
Spoke with the kitchen designer today and made an appointment for he and the contractor to come over on Monday afternoon for the final measurements. Once he does that and completes the design and I approve it, it’s only three weeks from the time materials are ordered that they come in. I guess I’ll know more on Monday about when installation will occur and what-not.
I tried a variation on eggplant parm this week. I cut slices of eggplant about an inch think, coated them with flour, dipped them in egg, then gave them a toss in bread crumbs. Set them on a baking sheet, sprayed lightly with olive oil, and baked at 400 for 10 minutes each side. Next I topped each slice with a thick (probably 1/2 inch) slice of fresh tomato that was salted, peppered, and sprinkled with basil. I stacked on a very thin slice of fresh mozzarella and popped the tray back into the oven for about 5 minutes, just to warm the tomatoes and melt the cheese. I loved it. And I didn’t think that my eggplant parm could be much better and almost found no reason to try anything different. I’m glad that I did!
In other news, our moon flower finally bloomed. Like morning glories, these flowers close up in the heat of day, and bloom in the cool of the evening.
